This recipe for Gingerbread “Zipper” men was provided by Lisa Pitman, mother to heart kid Patrick and makes about 20 men.

Gingerbread Zipper Men 


Baking paper

125g margarine

½ cup brown sugar

½ cup golden syrup

1 egg yolk

1 ½ cups Self Raising Flour

1 ½ cups Plain Flour

1tsp ground ginger OR 2tsp crushed ginger

1tsp mixed spice

Plain Flour to dust

Candy Hearts & Icing gel pens to decorate



  1. Preheat oven to 180°C (160°C Fan Forced) & line 2 baking trays with baking paper.
  2. Use an electric beater to beat the margarine & sugar until pale & creamy.
  3. Add the golden syrup & egg yolk & beat until combined.
  4. Stir in the Flours, ginger & mixed spice.
  5. Turn out onto a lightly floured surface & knead until smooth.  Add plain flour if dough is too sticky.  Wrap & allow to rest in fridge for 30 minutes.
  6. Roll out onto lightly floured surface until approximately 4mm thick.  Use a gingerbread man cutter to cut out shapes & place on trays about 3cm apart.  Repeat with any excess dough.
  7. Bake in oven for 10 minutes or until golden brown.  Remove from the oven & place on a cooling rack.
  8. Once cool decorate zipper men as pictured or as your heart desires.


Makes at least 20 x 9cm men or 30 x 7cm men
