Polly and Waz


Polly and Waz are winners of The Block from 2011 and great supporters of HeartKids. This lemon tart serves ten.

Lemon Tart



  • 250g plain sweet biscuits
  • 125g melted butter


  • 750g cream cheese softened
  • 2 teaspoons finely grated lemon rind
  • 1/2 cup or 120g caster sugar
  • 3 eggs

Lemon curd

  • 45g butter
  • 1/2 cup or 110g caster sugar
  • 1 egg lightly beaten
  • 1 teaspoon finely grated lemon rind
  • 2 Tablespoons lemon juice


  1. Process biscuits till fine. Add butter, process till combined. Press mixture over base and side of 22cm springform tin. Place tin on oven tray and refrigerate for 30mins
  2. Pre heat oven to 160 or 140 fan forced
  3. Make filling by beating cheese, rind and sugar in medium bowl with electric mixer until smoot, beat in eggs one at a time
  4. Pour filling into tin, bake about 1 hour. Cool cheesecake in oven with door ajar
  5. Make lemon curd
  6. Spread cheesecake with lemon curd, refrigerate 3 hours or overnight

Lemon curd

  1. Combine ingredients in small heatproof bowl. Place bowl over small saucepan of simmering water (water must not touch bottom of bowl) cook, stirring constantly, about 20 mins or until mixture coats the back of a spoon. Remove bowl from saucepan immediately. Cover curd with plastic wrap, cool to room temperature
