Easy chocolate brownies

Ingredients

  • 125g unsalted butter (plus some for greasing the cake tin)
  • 200g dark chocolate, chopped
  • 3/4 cup brown sugar
  • 1 tsp vanilla essence
  • 1 cup plain flour
  • 3 eggs, lightly whisked
  • 1/2 cup dark choc bits
  • 1/2 cup chopped nuts (pecans, almonds or walnuts work well). If you don’t like nuts or want an extra sweet treat, replace with white or milk choc bits.

How to make the brownie

  • Preheat oven to 180°C (160°C for fan forced). Grease a 20cm square cake tin and line with non-stick baking paper.
  • Melt butter and chocolate together in a medium saucepan over low heat. Stir in brown sugar and vanilla.
  • Add flour and eggs and beat with a wooden spoon until well combined. Stir in choc bits and nuts.
  • Pour into the cake tin and smooth surface. Bake for about 40 minutes until set. Remove from oven. Cool in tin for 5-10 minutes before placing on a wire rack. Slice, serve and enjoy!!
