Robbie is a former professional NRL player representing Melbourne Storm, and a former Kangaroo and here shares his Aunty Joan’s orange slice recipe with us for Cuppa 2013.

Aunty Joan’s Orange Slice

 

Ingredients

250 grams packet of sweet biscuits

1 cup coconut

1 tablespoon grated orange rind

¾ cup condensed milk

100 grams butter

 

Icing – 1 cup icing sugar

40grams butter

1-2 tablespoons orange juice

 

Directions

  1. Crush biscuits with a rolling pin
  2. Put biscuits crumbs, coconut and most of orange rind in bowl and mix
  3. Melt condensed milk and butter over low heat (Do not let burn) for approx 2 – 3 mins
  4. When melted pour over biscuit mix until combined
  5. Press mixture into greased slice tin (20 x 30cm tin)
  6. Chill for 20 mins in fridge then ice with icing mix (to make icing mix icing sugar and butter in small bowl then add orange juice)
  7. Sprinkle coconut and remainder of orange rind on top of iced slice. Enjoy!
